Raw Zucchini, Salicornia, and Red Berries Salad

Chef’s Note: This is as simple as it can possibly get!



  • 1 medium zucchini (Courgette)
  • 1 cup red berries
  • 10 ½ oz Salicornia
  • ½ lemon, juice
  • ½ tbsp olive oil
  • cracked black pepper
  • salt



  1. Slice the zucchini and toss everything in a bowl, adding salt to taste. A good dash of black pepper won’t go amiss here either if you like that sort of thing.
