Thyme Lemonade

Thyme Lemonade
Servings 1 liter
Ingredients
- 8 ¾ oz caster sugar
- 1 pint water
- 4 sprigs of thyme
- 2 lemons juice only
- 1 liter sparkling water
- Ice, to serve
- Lemon slices, to serve
- Sprigs of thyme, to serve
Instructions
- To prepare the syrup, place the sugar, water, and thyme into a saucepan over a medium heat and bring to the boil, boil for 1 minute then reduce the heat to a simmer for about 7 to 8 minutes until a light syrup forms. Remove from the heat and remove the thyme sprigs. Leave to cool completely.
- Stir in the lemon juice.
- Pour the thyme lemon syrup into a pretty jug or carafe, add the ice, thyme sprigs, lemon sprigs and pour in the sparkling water. Stir lightly and serve.
